American Academy of Chefs
The American Academy of Chefs (AAC), the honor society of the
American
Culinary Federation (ACF), was organized in 1952 by the ACF Board of
Directors.
The Academy is a way for the ACF to recognize the achievements of its
fellow culinarians.
Academy Fellows demonstrate the highest standards of professionalism in
the
organization, society and industry.
ACF Culinary Team USA
One of the most internationally
recognized programs of ACF is ACF Culinary Team USA, the official
representative for the United States in international culinary
competitions.
Since 1956, the team has participated in the world's oldest and largest
international culinary competitions.
Chef & Child
Foundation
The purpose of the Chef & Child Foundation, which was founded in
1989, is
to foster, promote, encourage and stimulate an awareness of proper
nutrition in
preschool and elementary school children. The Chef & Child
Foundation
sponsors educational grants to non-profit institutions to use for
nutritional
research and educational programs in the promotion of proper nutrition.
The
foundation funds programs which give instruction on nutrition and proper
eating
habits to school age children. Also, the foundation provides emergency
food
relief to victims of natural or other disasters.
Seal of Approval Program
In the 1950s, the ACF was already identified by retail and foodservice
manufacturers as a highly credible source for endorsement. ACF had
established
a solid reputation for its highly achieved standards in the foodservice
industry. A "Seal of Merit" program was established by ACF in
response to these needs. ACF chefs were quickly being contacted by food
and
equipment manufacturers to volunteer their time for testing purposes.
